Be sure to check the updated post that is linked as the latest version of MS teams requires slightly different commands and did solve the issue for me.

This worked perfectly, thanks so much for sharing! 

My only slight issue is that although MS Teams now recognises the camera, it is stil tring to use the in-built mic in my laptop rather than the GoPro. Anyone got any suggestions or should I stick to using AirPods for video meetings?

Sound is not (yet at least) supported by the webcam drivers. You'll have to use another mic, your Airpods should work well.
