Sorry about the issues you are experiencing.
Here's what I can tell you: I have been testing extensively the next update and haven't encountered those issues (iOS/Android) so in my opinion the problems you are having are fixed in the next update. Hope you can be patient, coming soon.
The next update will bring bug/crash fixes as well as new stuff :)
The update I'm talking about is for GoPro App / not Quik App.
There was Quik App and GoPro App > with GoPro App 6.0 we added the experience of multi-clip editing into GoPro App. Quik App is for now a different / stand alone app only for editing. GoPro App has all the camera aspects as well.
GoPro App export quality is set to 1080/60 as default, the info isn't in the Settings like Quik App.
The integration was a big big project that took lots of time and efforts - now that we've built the basis we will improve on it and make it better. Don't be disappointed :)

There wasn't any update lately so the fix isn't live yet indeed, an update of GoPro App is coming soon. I have no info concerning Quik App update though. Best would be to use the multi-clip-editing within GoPro App.
The update coming will bring bug/crash fixes as well as new things.
