Sorry about that, this could be lots of different things it's hard to know what's happening.
I would suggest to try making a test video with just one single media. Try changing video style > try Grammy or Raw.
If it doesn't work: try to close and kill the app, try to reboot your device.
Also it could be interesting to delete and install again the app > sometimes a fresh start brings the solution ;) Deleting the app deletes all its content - video and drafts - so make sure you have saved all your videos on your phone. Do it only if you have everything saved first because you will be installing a brand new Quik.
Latest update > 5.0.5 is an update to Google Photos so it doesn't change anything in the video engine. The update is there to make sure users can still access Google Photos.
