I just did a test and was able to save a photo from a video on Quik for desktop.
What version of Quik for desktop are you using?
See if resetting the application will sort out the issue. Go to Help then Restart with default settings.

The version I have is: 18.104.22.1685
I have tried to do the resetting, but it still doesn´t work. I have it on two different laptops a new one with windows 10 pro and an old one with windows 10 home. And it doesn´t work on any of them. It used to work on the old one. But on day two of editing, it suddenly didn´t work any more.
If you have any other ideas, they are more than welcome.

Thanks for the update, @lisehero5. I also want to get a better understanding on what could possibly be causing this issue. Does the application hung up in never-ending loop? Or "Saving to Edits" screen disappears but the grabbed photo does not show up in the Edits folder on Quik for Desktop?
