You can use any resolution with 60FPS so that you can at least slow down some footage. 

You can use >60 FPS if you really want a slow motion footage.

I'd also consider a max ISO of 100 if you're ski-ing in bright daylight, will stop you getting a white out image which will result in very dark footage.  You can balance the ISO as you see fit depending on the available light and ski-ing conditions (open slope, between tree's etc).

Especially with the SD card.

Make sure to use a recommended SD card and reformat and test the SD card before recording.
