your analogy with photo printing makes sense in this case.
so...I always thought this image is how the camera crops and read the sensor...
instead seems that camera will read always the sensor surface (minus a small area) but will do this at 4K, 2.7K, 1440 or 1080 resolution.
and the above image is the result of "printing" different resolutions on a 4K screen.
coming from me, a GoPro addicted for years is a big minus...
GoPro8 (and 7, 6, 5 as well) FOV advertised is indeed not resolution-dependent...

[ New ]If used in the context of "this is how many pixels the resolutions have compared to each other" it sort of makes sense.
