For photography, I'd make sure HDR or Supershot is turned off, otherwise you may get ghosting.
For video, I'd go with the highest resolution and frame rate you can. The High resolution will help in post in case you need to crop the image afterward, the frame rate will help with action shots (ocean spray etc). Although 60FPS should be good enough for that.
It will also depend on how long you want to film for, the higher resoution and frame rates will fill up your card and run down your camera battery faster. I'd also enable protune, even if you don't adjust the settings, this will help maintain a higher bit rate.
