What settings for hero8 black to take photos of horses hooves close range indoor and outdoor?

Im a beginner with gopro and just bought a hero8 black for our non-profit organisation. I want to use it on either voice control (from my head) or in my hand to take photos mostly of horses hooves before, during and after I have trimmed them. I also want to take video footage. What settings would you recommend for these please? I thought about getting the media mod and light mod to video and take photos in dark stables.... any advice greatly received! thanks!
