Hey guys !
I bought my gopro 5 Black about a year ago, and since then im having a problem with a very bright picture against the cockpit glass while recording my training flights.
I enclosed a picture to give you an example.
Is there anything I can do to fix this issue ?

Yup, your camera is mounted too far back in the cockpit and it's trying to balance capturing the image inside the cockpit and outside the glass. Since it's dark in the cockpit, it's trying to lighten things up, however since it's really bright outside, that's just making the picture white.
You could try adjusting your ISO settings to 200 max which may help although frankly I would just mount the camera in the window. It's what I do with the wife's plane.
I'm not sure if the GP5 has a center spot option? The GP4 did, but basically instead of the camera trying to adjust the image based upon everything it see's, it will adjust it based on what's in the very center of the image. The result would be that you would be able to see what's outside the window but everything in the cockpit will be dark.
Another option would be to mount a light behind the camera. Brighten up the cockpit without providing a distraction and that will balance the available light a bit better.
I've also picked up some tiedown mounts for my GoPro's that work wonders for filming from the outside of the plane.
