If a camera is freezing up, it is usually an indicator the camera's software needs to be updated or there is potentially an issue with the microSD being used. Try removing the SD card and see if the camera still freezes up while navigating the menu. If it no longer freezes, then the issue is likely stemming from the SD card. If you have a spare SD card, you may test it with your camera and see if the issue persists.
You may also try a manual software update. Instructions will be listed once you get past the serial number and email address page.

Further down the chart, the HERO6 Black camera is tested to work with higher capacity SD cards as well so long as it's SanDisk Extreme/Extreme Plus/Extreme Pro UHS Video Speed Class 30 (V30).
