I agree with everything you wrote. This is the first GoPro camera that I can wholeheartedly say, if you're not spending the extra $100 how to get the upgraded version, you are wasting your money. I don't care if it's for casual or professional use, the Hero6 is just in a class by itself. It's not just better, it's much much better!

i too was trigger happy and updated the firmware on day 1. but boy am i glad to have returned the product and come to this personal conclusion that the update was the cause of our split views.

I just encountered this issue in the field with my GoPro Hero 6.
Bad news... I was set to 2.7k 60fps (not 4k 30fps like others have said). I had video stabilization on. I noticed my camera also froze on "Saving" the video when I stopped recording and head to hard restart the GoPro. I was on the latest update.
When I went to record again the issue went away.

its a great great camera. i dont see myself returning it the way i did with my go pro hero 5.
if u cant revert back to original firmware (doing a factory reset from the menu WONT rollback the firmware), get an exchange while its still early man. and do NOT upgrade ur firmware. see if that fixes ur problem the way it did mine.

must admit i did try your settings on mine & had no issues
looking at the spec before I bought the 6 I wondered why it wasn't called a Hero 5+, but it really is so much better than that
