See if resetting the camera to its factory settings will sort out the issue.
Should it be the same, a manual update is the next step.

Sorry to hear about the trouble, @enricobrun. Typically, the touch display flickers due to artificial lighting. You check this thread for more details about this. If you've already tried toggling the video format, changed FPS to no avail, try to manually reinstall the firmware update of your camera using the instructions here: Software Update Instructions for HERO7 Cameras
