During one flight session in less than perfect conditions, cloudy and overcast conditions, the footage recorded constantly changes from light to dark, then dark to light. For example, the grass on the footage goes from dark green to very light green and the other way round depentant on the conditions.
Are there any settings to prevent this and just keep a more constant colour grading during the footage?

Your GoPro is changing exposures from under- to over- and back. To lock the exposure, hold down on the screen. When a small box appears, look at the bottom of the screen. There will be an icon for "auto exposure". Tap that. It should change to "locked exposure". Does everything look OK? If so, then press the check mark to confirm.

It's not possible to set exposure lock hands-free as far as I know. The only way is to actually hold down the screen until the box pops up. However, you can select exposure lock while recording. Just hold the screen as usual. Maybe one of the moderators/experienced users can help you.

If you did not activate Protune, you can activate the block of exposure from the Karma Controller.
Do as maplepanda said.
Tap on the screen to activate the lock area. Is more or less similar on the Karma Controller
