There are many times when I finished recording a video and check the playback on gopro, the video is showing as a 5 seconds video (or somethings 15 seconds). However, when I am playing it, the timebar will be at 5 seconds and stop moving, while the video keeps playing. It is annoying as I can't highlight tag the video. Also can't skip through the video.
The video file seems okay after transferred to the computer, however it doesn't show correctly on the gopro. What is going on here?

Are you using a recommended SD card?
Please check recommended SD cards here: https://gopro.com/help/articles/Block/microSD-Card-Considerations
If you're using an SD card listed on that link then you can try to manually update your camera.
Here's the step on how to do it: https://gopro.com/help/articles/how_to/Software-Update-Instructions-for-HERO5-Cameras (Follow Manual Update)
Make sure to back up all your files first and then reformat your SD card before you proceed.
If the issue still persist it would be best to contact support: https://gopro.com/help/ContactUs

I do not see my SD card on the list but it is a MicroSDHC EVO Plus 32GB MB-MC32GA/AM
Is that a problem? Why would it be?

The reason is the read and write speed.
GoPro records and save high quality image/video and if the SD card can't keep up with the write speed of the camera it might cause conflict or issue.

I don't understand. In the list it shows cards with UHS-1 class card working with the Hero 5, my card is also a UHS-1 class card, with bigger capacity.
Also, from the article below from GoPro, it shows the UHS-1 class card should work fine:

Yes it is UHS-1 but there are some brand that is having compatibility issue with the camera.
You can try to check recommended SD card brands and if it still happening you might consider contacting GoPro Customer Support Team.
