and the very very last question is :)
Why the 3 mics are working only with low compression? What's happening to the third mic when recording med-high compression or with raw audio off?

For medium and high, two mics are being used in one file and the third for the second file.

I believe the two are Stereo and Wind Reduction, BTW. Not positive about that though. If I am correct, one file is using two mics (stereo) and the other is a mono mic sent to both channels for stereo effect.

But yes, on Low you are getting virtually no processing (there is a little, so I can't say absolutely none). However, generally wind is coming from one direction so one or two of the files will have less wind noise. If you layer all three, you can apply more audio gain to the files that sound best. Apply audio Effects to clean up the noisiest one and then bring it up to a suitable level.
