I am new to the HERO 7 world and plan on using a pair of them in a Phantom F4D fighter jet. In the cockpit, one will be pointing forward, and in the back seat, one will be pointing back. Obviously they will both have a portion of the mounting surface and surrounding cockpit in visibility range. Will the lock in landscape feature lock in on the cockpit features for stability?

One of the new features on HERO7 cameras is the portrait orientation. You can now easily switch between landscape and portrait shots. The touchscreen menu will automatically adjust and your media will playback rightside up.
That being said, Landscape Lock option is also available on the settings to lock your camera into landscape orientation and keeps you from accidentally starting a video in portrait orientation. The touchscreen menu will not change if you rotate your camera to a portrait orientation.
