is there a hack or a way to record a fixed time length of video when you press the record button.
GoPro set to Video as default.
Record button pressed
Video starts recording.
Video recording automatically stops at (for example) 2 mins

If i set to 5 min length (which is the least possible) - trying to get my head around this - video will record for 5 mins and then go back to starting point of 'that' video and record over previous recording?
But then this will not help in being able to save each 5min video .

@rjrambler, not likely. The interval determines the approximate length of video that you'll have after you stop recording. Since GoPro cameras does file chaptering -- the camera will automatically segment into a new file chapter or splits a longer (continuous) video recording into smaller files, you will be able to playback a 1 minute video on your HERO7 Black camera when you set 5 minute Looping interval. However, the rest of the chaptered files will be saved in the SD card and can be viewed when you connect your SD card to your computer.
- Chapter size: approx. 4.0 GB
- Chapter size with Looping set to 5 min: 1 minute
- Chapter size with Looping set to 20 min and above: 5 minutes
I made a quick sample test -- HERO7 Black camera with 5 minute Looping interval.
Looping video playback from the camera.
Files as shown in the SD card when accessed through a computer.
Therefore, if you want a 5 minute video output, you'd want to set your Looping interval to 20 min and above (considering how chaptering works in the camera).
Hoping this helps answer your question.
