I am trying to record long videos on my GoPro session. The camera starts flashing a red light (which I presume means it's recording) but then switches to a flashing blue light.
I called GoPro and asked them if the flashing blue light means that it stopped recording. They said that a flashing blue light could mean it's still recording but that the wifi is on. Any thoughts if that is accurate?

Not on the "GoPro Approved" memory card list here: https://gopro.com/help/articles/Block/microSD-Card-Considerations
As I remember there have been several here with issues using that card.
You'll probably want to get a faster transfer rate card, NOT ALL UHS1 CARDS ARE FAST ENOUGH FOR GOPRO!

A simple short press of the shutter (round) button on top starts recording. Light will blink red whilst recording.
How long does the light blink red before it goes to blue?
Try a factory reset of your H5S and try again.

Try a factory reset and see if that cures your issue. Many users have cured similar strange issues by doing so.
Another factor could be the memory card, what card are you using?
