Go Pro Hero 8 with latest firmware update, I facing problem after I view Photo / Video from Go Pro then turn back to capture screen and is stuck at there, nth I can do after just need turn off power only will do.

May I know what SD card brand and model are you using?
Most of the time it's due to incompatible SD card: https://gopro.com/help/articles/block/microSD-Card-Considerations
If you are using a recommended SD card.
Try to update your camera manually.

Hi I am using this model SANDISK EXTREME MICROSD SQXAF 128GB 100MB/S R ADP (SD-SDSQXAF-128G-GN6AA)
but on GO Pro Hero 5 is not have issues when I using this memory card. after I change to Hero 8 facing this problem.

yours SDSQXAF-128G-GN6AA is not in the list:
SDSQXA1-128G-GN6MA is in the list
hero5 is not as demanding with the microSD cards performances as hero8 (and hero7).
and, as @graytree76514 said, make a manual update on a fresh hard formatted sd card (on PC).
I have a 4GB dedicated card that I use only for firmware updates - as hard format on PC take way less than on a 128-256GB card...

...usually, the camera cannot write on the SD card with the speed needed for 4K or high rates ==> lost frames
sometimes camera freeze on the recording, or jumping frames.
as well freeze on playing the videos.
I remember on h7, when I film 4K25fps Superview Stabilization on, I had freeze about 25% of the times when I used an older "Samsung Evo+", not the recommended newer "Samsung Evo plus" ...[ + and plus big difference].
