So, finally in device manager it was fixed. Looks like a driver problem.
My GoPro folder is btw now called 'GoPro MTP Client Disk Volume'....
Maybe an update or explaination @Gopro?

This sorted my issue as well. Thank you. I keep thinking why this happens occasionally when I plug the camera in. Thanks again, you saved me a windows 10 reinstall :-)
I had the same issue.
I fixed mine by going to 'Control Panel\Hardware and Sound\Devices and Printers'
right click on the device (HERO5 Black) and select Troubleshoot.
Hope this fix yours too.

I am honestly disgusted by GoPro and my camera. First one died after 5 months and now this one can't even connect so I can backup my files. What a waste of money!
The replacement is still slow, never responding on time when using it. I only faced issues with Hero 5. Huge disspaointment and needless to say I will never even get near your future products.
The only pro is your customer support and I guess this is because so many people face issues with your products so this is the least you can do...
