What version of the GoPro App are you using?
Do you still have enough storage on your phone?
Is the file already saved on the app before trimming or is it from the camera?

I’m using version 7.0.1 Downloaded from the App Store. Is have 80gb free storage on my iPhone and it’s straight from the camera as taking a 30 min video seems like it would take days.

What SD card are you using? The brand, model, and capacity will be helpful.
To help isolate the issue, you may also try pairing the camera with another phone.
See if the same is observed.

Ultra cards are not recommended to be used with GoPro cameras. They may work initially but they are observed to cause issues with the camera eventually. It is best to use one of the recommended cards on the list here:
Once you have access to another card, make sure to run a manual update. https://gopro.com/en/us/update/hero3
