If you haven't yet, see if your One Plus 6 has the Smart Network Switch or Intelligent Wi-Fi feature.Smart Wi-Fi / Wi-Fi+
Similar to Network Rating Provider, some Smart Wi-Fi implementations categorize the Wi-Fi networks broadcast by your GoPro camera as having poor signal.
Because of this, certain Smart Wi-Fi features need to be disabled.
Go to: Wi-Fi Settings > Advanced > Disable “Smart Network Switch” or “Auto Network Switch”
Let us know how it goes.

I was going to say the same as @aragon1006
I have oneplus 6t, hero 7 black, just had the same issue and worked out the same solution suggested myself (I've seen it before with other Android WiFi connections to dash cams and such).
..now to go in search of the solution to the problem I came online for :-)

Great to know that, @fasthero85747. Does the setting for Smart Network Switch or Intelligent Wi-Fi feature on your phone get disabled after every pairing? Your phone must be considering the GoPro signal to be a weak signal in the presence of another Wi-Fi network or connection. Thank you for sharing.
